Where were you born and raised? Long Island, New York
Age? I’m celebrating 40 years in November - in Vegas!
What got you interested in the F&B world?
In high school I began working at Chuck’s Steak House in Connecticut. From there I went to Marriott and on the way I did everything from scrubbing pots to managing people.
How did you end up working in Hawaii?
I had a degree in economics, and I was working at Mass Mutual and one day I just thought “What am I doing?” So my friend and I each bought a one-way ticket to Hawaii. I had this dream that I would bartend on the beach. My first job was at the Shack.
You were associated with Compadres for such a long time…
Yes, I started there as a bartender and eventually became the GM of both Hawaii locations. It was sad to see the restaurants close.
What’s always in your fridge?
Good Parmesan cheese and half and half.
With whom would you most like to have dinner?
Jimi Hendrix, and whoever invented pizza - pizza is the perfect food.
What’s something that people would be surprised to learn about you?
Every year I shop for, and cook a holiday meal for, the “orphan” staff at the restaurant on Thanksgiving. Last year chef Mike (Longworth) and I cooked an entire dinner of turkey and prime rib for our staff on Thanksgiving. I’m famous for my buffalo wings!
