Where were you born and raised? Hawaii.
What started your interest in the food and beverage world?
I liked the idea of working and talking with all types of people. I enjoy the personal interaction and social aspect of the job.
Were you aware of the extent of the beautiful artwork at Café Sistina before you went to work there?
Not at all. The first time I stepped into the restaurant, I was shocked by the beautiful murals. I have always loved classical art and was excited to find such a wealth of reproductions in my hometown.
How do you describe Sergio’s food to people who’ve never eaten at the café?
Just like his art, Sergio cooks with passion. There is an amazing variety of authentic Northern Italian cuisines as well as Sergio’s own Italian creations which are influenced by many cultures.
What’s your favorite dish there?
I have several! The Spicy Tutto Mare, Veal Barolo, Gorganzola Ravioli and the Penne Melenzane.
Favorite other restaurants?
Morton’s Steak House and Sushi King (because of its later hours).
How do you unwind after work?
I like to have a drink or two with my co-workers and then I go home and cook.
Toughest part of the job?
Making sure that all customers and co-workers leave the restaurant happy and wanting to come back.
Best part?
The food, making positive connections with new customers, making friendships with the regular customers, and the sense of family the restaurant creates with all the co-workers.
Who would you most like to see come into the restaurant for dinner?
Anthony Bourdain or Andrew Zimmern.
